How to Make Shrimp Flavored Rengginang

Finding rengginang is not difficult, because it is usually available in traditional markets, warungs, mini markets, and supermarkets.


Even though it's easy to find or search for, that doesn't mean we shouldn't make our own rengginang at home.

Recipe Ingredients:


  • 500 grams of white glutinous rice, soak for 3 hours, drain
  • 4 cloves of garlic, puree
  • 1 tsp salt
  • 1/2 tsp shrimp paste
  • 150 grams of shrimp, remove the skin, finely chopped


Recipe Instructions:


Step 1, steam the glutinous rice: Steam the glutinous rice in a frying pan until the glutinous rice is half cooked, about 15 minutes, marked by sticking the glutinous rice grains, remove from heat, transfer to a saucepan.


Step 2, boil water: While steaming, bring 250 ml of water to a boil, add all the remaining ingredients, mix well, pour the sticky rice into the pot, stir well until the spices are completely absorbed, let stand for 30 minutes.


Step 3, steam again: Steam the glutinous rice again in the pot until the glutinous rice is cooked for 30 minutes.


Step 4, print or form rengginang: Remove, take 2 tablespoons of sticky rice that is still hot, form into rounds (or flatten), place on a winnowing tray, work until cooked.


Step 5, drying the rengginang: Dry the rengginang under the hot sun, until it is completely dry, remove and store in a dry container.


Step 6, fry the rengginang: Heat a little cooking oil, until medium heat, add enough rengginang, fry until it blooms, remove, drain.


Step 7, store or serve: Once cool, store in a tight jar, or serve immediately.
